Balbacua is a beef stew that is usually paired with rice or noodles like Misua or Miki noodles. But unlike any other beef dish, Balbacua is using part of the beef that is rich in collagen such as the oxtail, skin, and joints. Great food to eat for dinner or lunch with the family. You can taste it through local restaurants around Cebu or try cooking it on your own.
